I have wonderful memories of eating at Gauthier— a restaurant in Soho that feels like a house, not a restaurant. They have been producing amazing vegan meal kits during lockdown, which even a carnivore like myself has enjoyed hugely. They included a sublime, and foolproof, vegan soufflé in one of their meal kits. It managed to fool me. I suspect the expert version is not meant to be a squidgy ball of rubber. I’d like to try the real thing.

Beyond the joy of soufflé, my real memory of Gauthier is the joy of a wonderful place, warm service, gorgeous food and wine. All I need now is an amuse-bouche of a vaccine, and then for Gauthier to provide the celebration of a return to life.
